Mastering the Mushroom Quiche

Instructions:

  1. Make the crust: In a food processor, pulse together flour and salt. Add butter and pulse until the mixture resembles coarse crumbs. Add ice water one tablespoon at a time until the dough comes together. Form a disc, wrap in plastic, and refrigerate for 30 minutes.
  2. Prep the filling: Preheat oven to 375°F (190°C). Sauté the onion in olive oil until softened. Add the mushrooms and cook until they release their liquid and are slightly browned.
  3. Blind bake: Roll out chilled dough and fit into a 9-inch tart pan. Prick the bottom with a fork. Bake for 15 minutes.
  4. Whisk the custard: Whisk together eggs, cream, milk, salt, and pepper.
  5. Assemble the quiche: Sprinkle the sautéed mushrooms and Gruyère cheese over the pre-baked crust. Gently pour in the custard.
  6. Bake and enjoy: Bake for 30-35 minutes, or until the filling is set and slightly golden. Let cool for a few minutes before slicing and serving.
