Auricularia polytricha, commonly known as Wood Ear Mushroom, Cloud Ear, or Black Fungus, is a jelly-like edible fungus widely used in Asian cuisine and traditional medicine. It is closely related to Auricularia auricula-judae but is typically darker, slightly larger, and has a more robust, velvety texture. It is cultivated throughout China, Southeast Asia, and increasingly worldwide for its culinary versatility and health benefits.
History
Wood Ear mushrooms have been part of Chinese and East Asian diets for over 1,500 years. In traditional Chinese medicine (TCM), they are believed to improve circulation, support respiratory and digestive health, and nourish the lungs and blood. They were traditionally included in dishes to cool the body and cleanse the system.
Cultivation expanded significantly in the 20th century, and A. polytricha is now a staple in many Asian dishes, often appearing in stir-fries, hot and sour soup, and cold salads.
Overview
This fungus forms ear-shaped, dark brown to black fruiting bodies with a rubbery, gelatinous texture and fine surface hairs (polytricha means “many hairs”). It grows on dead hardwood trees in humid environments and is easily cultivated on sawdust blocks or logs.
It is virtually tasteless but absorbs flavors well, making it ideal in dishes requiring texture. It is low in calories and fat, rich in fiber, iron, potassium, and polysaccharides that support immune function and cardiovascular health. It is always cooked before consumption and commonly sold dried for long-term storage.
