Calvatia gigantea, known as the Giant Puffball, is a striking, edible fungus famous for its enormous size—sometimes reaching diameters of 20–50 cm or more. This spherical, white mushroom is typically found in meadows, fields, and forest edges across North America and Europe. When harvested at the right time, it offers a mild, pleasant flavor and a firm, marshmallow-like texture that lends itself well to cooking.
Giant Puffballs have been consumed since ancient times and were mentioned in early European herbal texts. Aside from their culinary value, dried puffballs were once used in folk medicine and battlefield medicine to stop bleeding due to their coagulant properties.
They’ve also gained attention in modern times as a forager’s favorite—both for their impressive appearance and ease of identification. As long as the interior is pure white and firm, it is considered safe to eat.
This mushroom has no cap, gills, or stem in the conventional sense. Instead, it forms a smooth, white, ball-like fruiting body that matures into a yellow-brown spore sac, eventually releasing spores through ruptures on top. It grows from late summer into fall, usually in open grassy areas.
Giant Puffballs are best consumed when young and fresh. Slices can be grilled, sautéed, breaded and fried, or used as a base for mushroom steaks or even "puffball pizza." They are low in calories, contain fiber and protein, and are valued for their novelty, nutritional content, and culinary versatility.

Edibility: Edible only when young and the interior is solid, pure white. The fruiting body must be cut in half before eating to confirm the flesh is uniformly white with no developing spore mass; once it matures to a dingy dark-violet, purplish-brown spore powder it is inedible. Caution: toxic false puffballs (Scleroderma species) can resemble young puffballs — a conspicuously thickened, firm outer skin is the hallmark of a poisonous false puffball, so discard any specimen with a tough rind or any internal discoloration.
